Mmmmmm Piiiiiiiiiie: Part Deaux

Remember those pies I was supposed to make during the Thanksgiving but didn’t because I went to Dallas to watch Baylor and Texas Tech play at AT&T Stadium?!?! Here’s da refresher

Well I finally made them tonight. Oh ma gawd I can’t even begin to tell you guys how incredibly happy I am to have sweet potato pie. Boo’s family don’t do sweet potato pie. In fact, I don’t think they’ve even heard of sweet potatoes being in pies. Empanadas yes but not the Southern favorite sweet potato pie. Lawd have murcy on my tummy this week because I assure you I can eat a whole dern pie by my damn self.

Oh ooooops… I just passed out from ginormous food coma. Mmmmmm this pie is so yummy in my tummy.

Now my one and only qualm I have with the four yeah man four pies I made is that I may need to scale the recipe down either to a half or to a fourth because I ain’t tryna make four pies each time especially since I could be the only person eating them. I’m also thinking of mixing the ground cinnamon, nutmeg and sugar together ahead of time to reduce the chance of clumps of spices. Also, I added one and a third tablespoons of flour in attempt to make the pie filling thicken up a little which it did thank gawd. I would also like to try my hand at making my own crust but uhhhh I’m in no rush for that at the present moment.

Aside from wanting to make a few modifications, I’m really happy I was able to make my favorite pie. It almost felt like my Granny was right beside me helping me bake and making sure I was able to accomplish my goal. How I miss her so much sometimes.
